Fresh Cucumber Salad

  • 2 large cucumbers, thinly sliced
  • ½ small red onion, thinly sliced
  • 2 tbsp fresh dill or parsley, chopped
  • 2 tbsp rice vinegar or white vinegar
  • 1 tbsp extra-virgin olive oil
  • 1 tsp sugar or honey (optional)
  • ½ tsp salt
  • ¼ tsp black pepper
  1. Slice the cucumbers and onion as thinly as possible.
  2. In a large bowl, whisk together the vinegar, olive oil, sugar (if using), salt, and black pepper.
  3. Add the cucumbers, onion, and chopped herbs.
  4. Toss until everything is evenly coated.
  5. Refrigerate for 15–30 minutes before serving to let the flavors develop.
  6. Toss once more and serve chilled.
